たまたま、別の調べものをしていて smtp(1) を読んでいたのですが、

       smtp_bind_address (empty)
              An optional numerical  network  address  that  the  SMTP  client
              should bind to when making an IPv4 connection.

       smtp_bind_address6 (empty)
              An  optional  numerical  network  address  that  the SMTP client
              should bind to when making an IPv6 connection.

といったパラメータがあります。ドメインに専用の設定の、複数のPostfixを
用意して、main.cfでこれらを指定することで、(やっと)できそうにも思えま
す。(たいへんですし、やりたいとは思いませんが。)
